Bell pepper snackS

Low glycemic bell peppers make a great substitute for any recipe that asks for chips or scoopers!


Option: nachoes

ingredients

Bell peppers, any color

Shredded or ground elk, deer steak, turkey, or beef

Manchego goat cheese

Taco seasoning (1 TSP)

Diced tomatos

Green onions

Olives, sliced

Sour cream

Directions

Cook meat till done, add taco seasoning and a little water.

Slice and quarter bell pepper into chip size pieces.

Using a cookie sheet or individual dish layer in order; peppers, meat, cheese, onion.

Bake at 350 for 13-15 minutes.

Top with tomato, olives, sour cream, and serve!

Ingredients

Bell peppers, any color

Olive oil

Manchego goat cheese

Seasoning, I used sea salt and oregano

Directions

Slice and quarter bell pepper into chip size pieces. Lay out on cookie sheet.

Slice cheese to fit cut chips sizes. Layer each bell pepper piece with cheese, then brush olive oil over each chip.

Sprinkle salt and selected seasoning over chips on tray.

Bake at 450 for 20 minutes. Use Broil for 2-3 to brown and crisp the edges.

Top with tomato, olives, sour cream, and serve!
